    Dear Jasmine, Thank you for purchasing Bee Natural honey. In answer to your question, what you are experiencing is our honey naturally crystalizing. We bottle our honey unfiltered, uncooked, as close to raw as possible, and in doing so we retain the wholistic goodness found in pure raw honey, including preserving its natural ability to crystalize.
    Honey, is one of a very few food groups, along with cinnamon and vinegar, that never spoils. The crystallization is bonified evidence of the honey’s purity and the fact that it has not been over processed, homogenized, or pasteurized in any way, ensures our honey retains its complete natural mix of enzymes, pollens, antioxidants, vitamins, minerals, and antimicrobial properties.
    While we bottle our honey “Just In Time” to insure an extended shelf life on grocery store shelves before crystallization begins to occur, many aspects that we do not have control over can determine how quickly a bottle may naturally crystalize, including the time the honey has been in the bottle, at what temperature it was stored by the grocery store, and the type of honeys that make up a certain batch, can and will all factor in toward determining how quickly or not a bottle of honey may crystalize.
    With that being said, we try to educate our customers about the nature of our honey on our back label, stating that our honey can and will naturally crystalize and that all one needs to do to in order to reliquefy the honey is to apply heat. As we instruct on our back label, you can place the bottle in hot but not boiling water for duration of time to reliquefy the honey and return the honey to a more liquid form. Or another easy means of reliquefication is to just place the bottle in direct sunlight for a duration of time, such as outside in the sun on a warm day, or on a warm window seal, or even on your car’s dashboard. In just a few hours, the honey will be reliquefied in full without issue.
    In close, just please note that if too much heat is applied, the honey can become runnier than perhaps you may desire. In such circumstances, you can simply place the honey in your refrigerator and use cool temperatures to educate the honey to begin to thicken or slowly again begin to crystalize once more, until after such time that it reaches the desired thickness you desire.

      Thank you for your comment. What seems to be the case, based on your description, is that the honey you purchased has naturally crystalized. Honey crystalizes naturally over time, depending on how long its been in the bottle and the temperatures in which it was stored/shelved, before and after purchase. Thus your gritty and extra thick experience is totally normal and there is nothing wrong with the honey as honey does not spoil. All you will need to do is warm the honey either in a hot but not boiling pot of water for a duration of time, or placing the bottle on a sunny, warm windowsill or cars dash for a duration of time until the bottles honey contents reliquefy. Hope this reply helps you remedy the issues you experience and allow you to enjoy the honey you purchased.
